FLETCHER FRITTATA

Ingredients:

1 - Yellow Onion

1 - Sweet Potato

2 - Bell Peppers

1 - Sm. Container White Mushrooms

1 - Package Italian Turkey Sausage (we used 2.5 links)

18 - Eggs

Seasonings to taste

Preparation:

• Begin cooking the Italian Turkey Sausage 

• Cut & begin to sauté the yellow onion 

• Peel & cube the sweet potato (300g) 

• Chop the bell peppers (300g) 

• Chop the white mushrooms (150g) 

• Combine the chopped veggies and onions in the same pan and sauté until mostly cooked.  

• Get a large baking pan and add 18 eggs (we used 13 whites and 5 whole eggs) 

• Chop the fully cooked sausage and add to the eggs.  

• Add in the mostly cooked veggies now too.  

• Season with salt, pepper and whatever else you like. 

Bake for 55 minutes or so at 350.

Let it cool almost completely before you cut it or it'll be a mess. Enjoy!
