MOM's JAMBALAYA
I (Blakley) grew up in Louisiana and this was a stable at dinner time. Recently my mom and I cooked this dish together and put a healthy twist on one of our favorite dishes. Since Jonathan is the self proclaimed ‘chef’ in the house… I had to teach him so we can eat it on the regular.
It’s a great wintertime meal and if you don’t mind leftovers you will be eating on it for a few days!
Ingredients:
Ground Pork
Ground Turkey or Diced Chicken
Turkey Sausage
2x Poblano Peppers
1x Jalapeno
1x Green Bell Peppers
1x Yellow Bell Pepper
1x Orange Bell Pepper
1x Large can fire roasted and diced tomatoes
1x Yellow or white onion
Chopped Garlic
Dried Thyme
Cajun Seasoning
Salt & PEPPER
Chicken Broth
Preparation
Dice and chop up all of the veggies… keep the pieces fairly small.
In one pan begin browning all of the meat except for the sausage if it is pre-cooked. In a large pot begin sautéing the onions and peppers and garlic.
Dice and add in the sausage once the meat begins to brown. Add your seasonings to both pots.
Add the cooked meat to the veggie pan. Add in your can of diced tomatoes and chicken broth (I use about 1/2 of the large box of broth). Bring the pot to a boil and then reduce to simmer for at least 30 minutes.
